We are looking to repoint some older Stress Tests within Stress Stimulus to a different environment. I was able to adjust all URLs within the script editor, however had a concern around the Target hosts form when the scripts were originally recorded. It appear that those are still pointing to the original environment. Is there a way to edit these to the hosts of the new environment without breaking the script? I only see Remove options and no references to these within script editor. Thanks for your help.

The easiest and most reliable way to repointing tests to a different environment is to use host remapping feature in StresStimulus that is described http://support.stresstimulus.com/display/doc51/Host+and+Port+Remapping
If you modified the URLs within the script editor, you would need to revert these changes by using undo feature http://support.stresstimulus.com/display/doc51/Action+History+and+Undo,
Alternatively, you can reopen an older version of the script before these changes.
After completing host remapping and running the test, you can verify that new hosts were targeted by querying the test log http://support.stresstimulus.com/display/doc51/Querying+the+Test+Log
