I have successfully downloaded and installed the tool, and conducted a few test run sessions. Does the tool provide a feature to watch the play-backs / replays visually with the UI? I know the tool offers a debug mode where the session details are display in the session grid. But I am thinking of a feature to watch the replay for one of the users with UI. Is this possible?

StresStimulus is a load testing tool for testing applications responsiveness and scalability, finding performance bottlenecks and concurrency errors, finding how many users your application can handle, and for capacity planning.
As in other performance testing tools that work on a protocol level, it is challenging to display and watch the visual replay of UI, while it is being traversed by multiple concurrent virtual users.
However, StresStimulus has some limited abilities to display a single user playback. When running Verify, you will see a visual playback of individual responses in a browser http://support.stresstimulus.com/display/doc53/Verifying+the+Test+Case. If the response is HTML, you may see the web page representation and perhaps UI elements. However, if a response is JSON, XML, etc., you'll just see transmitted data.
Also, in the report and the test case tree, you can see UI screenshots captured during recording http://support.stresstimulus.com/display/doc53/Request+Properties
