We have around 300 users that could be using our SharePoint site at any given time. 
Obviously, not all 300 are going to execute the exact same thing that very second. 
What is a realistic baseline to test for with 300 users accessing a site?

One approach to configuring your baseline test would be to identify several types of activity that either impact system performance or are frequently used by many users. For example, uploading / downloading documents, completing a form, adding a contact information, etc.
 
You can consult your SharePoint users about navigation scenarios they use. Then record each type of activity separately and save them as individual test cases. For each test case, assign a mix weight that represent a number of emulated users cycling through this test case.
 
After that, navigate through StresStimulus settings and select options that most accurately represent your production environment. For example, web browser and network mix, think time, number of users, etc. When you run such baseline test, its results are saved automatically.
 
After you make some system or hardware changes, use your baseline results to “compare results” report to see if you achieve your performance improvement goals.
 
As you get more experienced with StresStimulus, you would be able to configure more realistic tests.
